WHAT’S FOR DINNER ON KETO? | WHAT I EAT KETO DIET | Suz and The Crew
Here’s a whole week of meal inspiration for those of you who follow a keto diet and live a keto lifestyle. These low carb recipes, for keto meals, are perfect for doing your weekly keto meal prep and are the perfect portions for couples doing keto together.
First up, I made an adaptation of Carolyn Ketchum’s Keto Shepard’s Pie. While my husband notoriously hates Shepard’s Pie, he actually ate a plate of this! I used sherry vinegar in place of red wine and ground beef in place of lamb and it turned out wonderfully. Next up, I threw together some super quick Keto Beef with Broccoli. This was even better leftover and next time I will be making double to have even more for meal prepping. I also made some low-carb chicken enchiladas this week. They turned out so well and stored and reheated perfectly! Can’t wait to try this recipe again with different types of meats and fillings. Finally, I made an Instant Pot Keto Soup with Italian Sausage and Kale. While I was inspired by a recipe I found (linked down below), I did have to spruce it up to keep the soup from being too bland. This was super quick and easy to make and would even freeze and reheat well. I will also be experimenting with this recipe in the future.
