First up, I made some low-carb garlic chicken. I used chicken leg quarters for this recipe which really made it budget friendly. Next up, I prepared a broccoli, sausage, and cauliflower gratin. It was outta this world and I really think the secret to it was the sauteed leek! It also stored and reheated super well and tasted even better after sitting in the fridge a couple days. I will definitely be making this again! Next, I made a slow-cooked pork roast. I used the crockpot to slow cook it and then added a rub before finishing it in the oven. The creamy gravy was a perfect compliment to the roast and it’s another recipe I’ll be making again. Finally, to finish out the week of meal prep, I baked some Pollock, that has just been taking up space in the freezer, and served it over a simple salad.
